Pineapple Bomb Lettuce Wraps

1 tablespoon olive oil

1 pound ground chicken/turkey 

2 cloves garlic, minced

1 onion, diced

1/2 red pepper, diced 

1/2 yellow pepper, diced 

2 carrots, peeled and shredded 

1 zucchini, spiralized and then cut in matchstick size pieces. 

1 teaspoon Sriracha, or more, to taste

2 green onions, thinly sliced

4-5 oz NJS Pineapple Bomb bbq sauce 

Kosher salt and freshly ground black pepper, to taste

1 head butter lettuce, divided to make little cups 

  1. Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned about 3-5 minutes, making to sure to crumble the chicken as it cooks; drain excess fat set chicken aside. 

  2. Add onion to the hot pan and saute for 3-5 minutes then add the peppers and continue to cook for 3-5 more minutes to soften the peppers. Add garlic and cook until fragrant. 1-2 minutes. Add chicken back to pan and add the Pineapple Bomb, start with 4 oz and add more according to taste. Keep on heat for a few more minutes just to heat chicken and sauce.

  3. Season with salt and pepper to taste. To serve spoon several tablespoons of this yummy mixture onto you lettuce cups… These are amazing but definitely a 3 napkin deal!
